1993年、24歳の時にbillsの第一号店をシドニーのダーリングハーストにオープン。「世界一の朝食」と称されたスクランブルエッグやリコッタパンケーキはたちまち地元で有名になり、今では地元客や観光客はもちろん、世界中の家族、セレブリティたちの間で広く親しまれている。 2008年には海外進出を果たし、第一号店を日本にオープン。今ではロンドン、ハワイ、ソウルにもレストランを構えいずれも成功をおさめている。
